A Perfect Summer Salad: Cucumber, Avocado, and Tomato with Thai Green Hot Sauce

Thai Green Summer Salad

This is not your typical run-of-the-mill salad that leaves you feeling unsatisfied and unfulfilled. No, my friends, this is a salad that packs a punch and will leave you begging for more. This is the Thai Green Cucumber Salad - a dish that combines the crispness of cucumbers, the creaminess of avocados, and the tangy sweetness of tomatoes with the slight kick of Thai Green hot sauce. It's a combination that will take your taste buds on a wild, guilt-free ride. So, let's roll up our sleeves, sharpen our knives, and whip up this salad that's a guaranteed crowd-pleaser for any summer get-together.

What you need:

  • 2 large cucumbers
  • 1/2-3/4 cup chopped cilantro
  • 1/8 chopped chives
  • 2 medium ripe avocados
  • 3 medium tomatoes
  • 1/2 large red onion
  • 1 Tbsp olive oil
  • 1/2 lemon, squeezed
  • 2-3 Tbsp Thai Green Hot Sauce
  • Dash of salt and pepper

Directions: 

  1. Cut the cucumbers in half lengthwise and then cut them in slices crosswise. Cube the avocado by cutting it in half lengthwise, removing the pit, cutting a grid pattern in the flesh and removing the fruit from the skin with a spoon. Dice the onion and tomato, roughly chop the cilantro, and finely chop the chives. 
  2. Mix all ingredients together in a large bowl. Serve right away, or store in the refrigerator until it’s time to eat!
