Thai Green Summer Salad

What you need:
- 2 large cucumbers
- 1/2-3/4 cup chopped cilantro
- 1/8 chopped chives
- 2 medium ripe avocados
- 3 medium tomatoes
- 1/2 large red onion
- 1 Tbsp olive oil
- 1/2 lemon, squeezed
- 2-3 Tbsp Thai Green Hot Sauce
- Dash of salt and pepper
Directions:
- Cut the cucumbers in half lengthwise and then cut them in slices crosswise. Cube the avocado by cutting it in half lengthwise, removing the pit, cutting a grid pattern in the flesh and removing the fruit from the skin with a spoon. Dice the onion and tomato, roughly chop the cilantro, and finely chop the chives.
- Mix all ingredients together in a large bowl. Serve right away, or store in the refrigerator until it’s time to eat!
